Food Safety Modernization Act (FSMA, 2011) has transformed the nation's food safety system by shifting the focus away from reaction to food related incidents to prevention of foodborne illness. The FDA has implemented many rules to conform to the FSMA legislation to ensure the safety of the food supply is shared, with responsibility being combined throughout many different points in the global food supply chain for both humans and animal food. The FDA rules are designed to provide very clear specific actions that must be taken at each of these points to prevent contamination. At Beef Jerky Factory, we work within all these standards, rules and guidelines to ensure all products produced are safe and shelf stable.

Standards

Internally, we have the ability to do generally accepted testing (Aw, protein, fat, moisture, allergen testing, ATP, weight checks, visual FSQR inspections, leak checks, and oxygen testing as examples). We also work with 3rd party labs to ensure completed products are shelf stable, micro toxin free, and verification of general analysis to ensure labeling efficacy. We focus on the safety and quality of all products made. We also follow all FDA and AAFCO guidelines and standards.
